Vegan Oatmeal Blender Pancakes

There are many different reasons people become vegan, from animal cruelty to health. But did you know that implementing a vegan diet is one of the most environmentally-friendly choices an individual can practice? By reducing your consumption of animal products, you will also reduce your carbon footprint and water consumption since it is required by the resource-intensive livestock industry. This simple pancake recipe is not only healthy and delicious but is also easily made in a blender with common pantry items. If you are pressed for time during the week, you can prep them days in advance and store them in the refrigerator or freezer. Dairy-free, egg-free, and gluten-free, this recipe is also perfect for those with food sensitivities.

Servings: approx. 6 pancakes

Ingredients:

  • ½ cup unsweetened applesauce
  • ¾ cup non-dairy milk*
  • 1 Tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 2 Tbsp pure maple syrup
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 Tbsp melted coconut oil, can be omitted

*Higher protein non-dairy milks lead to the best results. The acv + milk creates lactic acid that reacts with the baking soda/powder allowing the pancakes to rise and fluff.

 

Instructions:

  • Layer all ingredients into a blender in order starting with unsweetened applesauce to the coconut oil. Blend on high until the oats are broken down and the batter is smooth (about 20 seconds). The higher the blender speed, the smoother the result.
  • Over medium-low heat, lightly grease a non-stick skillet. Pour the batter into a skillet and wait for bubbles to form and edges to firm before flipping. Cook until golden brown and serve with desired toppings.

Note: The longer the batter sits, the thicker it becomes. In this scenario, do not add any additional liquid. The pancakes will just be extra thick. It is best to cook most or all of the batter at once.
